Guests staying at the exclusive El Questro Homestead this year will be invited to join Executive Chef Alan Groom in the kitchen to learn his culinary tips.

El Questro Homestead occupies a pocket of luxury in the Kimberley region in the million acre El Questro Wilderness Park, 110 km from Kununurra.
El Questro Wilderness Park is preparing to open for its 20th season in mid-April – coinciding with the end of the annual wet season, leaving gorges and rivers full, and wildlife in full bloom.
The luxury six-room Homestead is dramatically cantilevered over the Chamberlain River, set amid a landscape of salt plains, gorges, hot thermal springs and the backdrop of the Cockburn Ranges.
Groom, who is originally from the English city of Leeds but spent 20 years cooking in Canada, has been the Homestead chef for eight years with Canadian partner and Homestead manager Lori Litwack.
Taking full advantage of his spectacular surroundings, and a new kitchen for the 2011 season, Groom peppers his menus with an extensive range of local produce sourced from the abundant Kimberley area.
He turns wild rosella flowers, which bloom throughout the million acre El Questro Wilderness Park from May to August, into chutneys and sauces, giving everything a natural pinky red colour.
Groom uses crunchy baby boab root, which tastes like water chestnut or jicama (yam bean), raw in salads and salsas, also roasting and caramelizing it like a parsnip. The prolific edible yellow kapok flowers from the region are pressed between filo pastry and served with a cheese starter.
Groom is also famed for his flatbreads, 30cm-long strips, baked with dukkah and sea salt with a flaky texture. However, early morning baking demands an early wake up call for anyone interested in joining Groom!
Wild, saltwater barramundi from Wyndham, 100 km away is always on the menu at El Questro Homestead and it would be rare for a guest not to enjoy a barra during their stay. A favourite dish that guests should not leave without trying is the barramundi with green mango and boab root salsa.
Dining at the Homestead is done under the stars, at either of the large communal tables by the pool and on the verandah, or on one of the three private tables by the gorge edge. Guests staying in the private Chamberlain Gorge Suite can also choose to have dinner served in their room.
As a treat, guests can dine at one of the incredibly romantic tables on the edge of the gorge, overlooking the river, and with a soundtrack of owls and frogs.
Hours can be whiled away lazing by the pool or by taking advantage of one of the many activities included in the tariff, such as exclusive use of the Zebedee hot thermal springs, or the 4WD tour to Branco’s Lookout, or perhaps they’d simply enjoy taking a tinnie and heading down the Chamberlain River on a balmy afternoon.
